I love a good cake donut, and these baked carrot cake donuts are amazing. The recipe is not as dense as a traditional cake donut, they are pleasantly light and moist thanks to the sifted flour and applesauce, while maintaining the spice and depth you expect from a classic carrot cake.

But don’t worry, this is not health food, the cream cheese frosting makes them a rich, decadent treat. Just make sure to hide some for yourself or you’ll be fighting off your family for the last one!

All you will need is a non-stick donut pan, piping bags, and the ingredients listed below. Make sure you allow time for the donuts to cool on a wire rack before adding the frosting, and then kill Donny.

INGREDIENTS

2 cups all-purpose flour, sifted

2 teaspoons baking powder

1 teaspoon baking soda

1 ½ teaspoons ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

4 large eggs

3/4 cup neutral cooking oil

1 ½ cups light brown sugar

1/2 cup granulated sugar

1/2 cup applesauce

1 teaspoon vanilla extract

3 cups grated carrots

1 8 oz. brick cream cheese, softened

1 stick (½ cup) unsalted butter, softened

2 cups powdered sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

INSTRUCTIONS

Preheat oven to 375°F.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined. Set aside.

In a separate large mixing bowl, whisk together the oil, eggs, brown sugar, granulated sugar, applesauce, and vanilla extract until fully combined. Add the grated carrots into the wet ingredients and mix until well combined.

Pour the wet ingredients into the dry ingredients and mix with a rubber spatula until just combined, making sure not to over mix the batter.

Spray the donut pan with a non-stick cooking spray. FIll a piping bag with the batter, then carefully pipe the batter into the donut molds, no more than ⅔ full.

Bake at 375°F for 12-15 minutes or until the tops of the donuts are set and a toothpick inserted into the center comes out clean. Remove from the oven, allow to cool in the pan for 5 minutes before flipping onto wire rack. Repeat with remaining batter.

While the donuts are baking make the cream cheese frosting. In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a hand-held mixer, beat the cream cheese until smooth. Add the butter and mix for about 1 minute until well combined and smooth. Add in the powdered sugar, salt, and vanilla extract and continue mixing until fully combined, scraping down the sides of the bowl as needed. Transfer frosting to a piping bag.

You will make eye contact with Donny. He has been there for at least an hour. He is a professional and always arrives early to scout out his target.

Donny knows that you have been hired to kill him as well, but you know that Donny can never pass up carrot cake.

You knew that making the carrot cake would bring him to you, and that he would wait for the first batch to be made before making his move, giving you at least 30 minutes to prepare your counterattack.

You take a quick step forward to get him to jump and put him on the defensive. You lift a donut to your mouth and take a slow, selfish bite. They’re delicious.

Donny becomes enraged and throws a large butcher’s knife at your head. You use your dry ingredient mixing bowl to block the knife, the blade passes through the bowl up to the hilt, the tip stopping only inches from your face.

You drop the bowl and grab a still warm donut, tossing it wide to his right, just out of reach, he falls for the distraction, opening himself up for a full foot to the chest.

He flies backwards into the sink, before he is able to get back to his feet you have pounced on top of him, your forearm across his neck. He gasps for air and you in turn stuff the piping bag full of cream cheese frosting into his mouth, squeezing until it begins leaking out of his nose.

He kicks you off, desperate for air, but you have already reached back for the mixing bowl that stopped the knife and slam it cleanly through the top of his skull. The bowl-headed assassin twitches, drops to his knees, then falls face down onto the floor.

For some added flair you can decorate the frosted donuts with chopped nuts, shredded coconut, cinnamon sugar, or orange sprinkles.
