There is nothing better than self-pampering yourself a bit when you have a lot of time in your hands. After all, the best thing on a date night is the food. Making that will not only make you feel less isolated but also provide you with an option to cut the boredom a bit.

Ingredients

  1. Handful of chopped Broccoli
  2. Chopped Mushrooms (cremini/Portobello/oyster/shiitake/white button)
  3. 1 sliced yellow onion to saute
  4. 1 chopped tomato to saute
  5. Asparagus — diagonally sliced to let your palate feel the texture
  6. 1 tbsp Cashew Nut butter to enhance the flavour
  7. A sprinkle of Cumin seeds
  8. 1 tbsp clarified butter
  9. Olive oil
  10. Flax-seed powder to soak in some Omega fatty acids
  11. Salt as required
  12. Turmeric powder
  13. Chilli powder according to your spice tolerance
  14. Garlic -3 or 4 pods grated
  15. Ginger — grated

Method

Add butter and olive oil to a heated pan. Once heated add a sprinkle of cumin seeds and let it pop for a few seconds. Enjoy the theatrics while adding the sliced onion but be careful of any oil splash. Add the garlic, ginger and tomatoes and let it saute for a minute. Now add the broccoli and the asparagus. Saute for two minutes and add turmeric and chilli powder. Add the flax-seed powder and the cashew nut butter and mix well. Add salt and let your stew cook for about 10 minutes. Add your choice of mushrooms and let it cook for another 10 minutes. Voila after that your sensational warm bowl of stew is ready. Enjoy it with some garlic bread and good beer.

Ingredients(for the pasta)

  1. Fettuccine as much your heart wants
  2. Salt as required

Ingredients(for the sauce)

  1. Pasta water half a cup
  2. Butter as much as your heart wants
  3. Salt as required
  4. Pepper as liking( a little pepper killed nobody)
  5. Grated Parmesan or Pecorino Romano one cup

Method

Put a pot of water to boil and salt it heavily. The water should taste like ocean water. Believe me otherwise your noodles are going to taste bland. Once the water comes to a roaring boil add in your fettuccine and stir it immediately to avoid clumping of your pasta. Stop there! Do not add oil to your boiling pasta. It will adhere to the pasta and your sauce will just slip away. Take a quarter of a cup of pasta water and add it to another pan. Now stir in 250 g of butter slowly into the pan till all of it dissolves. Add a cup of Parmesan or pecorino romano cheese to your sauce and mix it gently. Add your pasta to the sauce and mix well. Now season with pepper and taste before adding salt. As the pasta water and cheese is salty. For you won’t need any extra salt but suit yourself. After all it’s your date. Serve it hot with a refreshing green salad and a bottle of Pinot Bianco to wrap up the day gracefully.

Ingredients

  1. 1 Salmon fillet
  2. Salt as required
  3. Pepper as liking( a little pepper killed nobody)
  4. 2 pods of Garlic finely chopped
  5. Olive oil
  6. Asparagus as much as you like
  7. 2 Potatoes</a>
  8. ½ lemon slices

Ingredients(for the marinade)

  1. ¼ cup Soy sauce
  2. ¼ cup Maple syrup or honey
  3. ½ lemon juice

Method

Take soy sauce, maple syrup or honey and lemon juice in a bowl and mix well. Take you salmon fillet and sprinkle salt and pepper on it accordingly. Add your salmon to the marinade and let it sit there for a minimum of 10 minutes and a maximum of 30 minutes. Anything more than 30 minutes and the acid will start cooking your fish. Take a bowl and add in peeled potatoes and asparagus. Add olive oil, salt, pepper and minced garlic and mix it well with your vegetables. Place your vegetables in a roasting tray and add a few lemon slices on top of them. Roast them for about 15 minutes. While your vegetables are roasting heat a pan and add olive oil to it. Do not place your fish in a cold pan otherwise it will stick to it. Once the oil and the pan are hot, add you fish skin-side down.

Do not touch it for about 4 minutes after that flip it and let it cook for another 4 minutes. Do not overcook it. I understand that there are a lot of “DO NOT”s but salmon is so close to my dating romantic heart that I can’t afford to ruin this meal of yours. Approximately after 8 minutes take your salmon out and serve it with the vegetables and a glass of Pinot Noir or Pinot Gris.

  1. ½ Chicken breast
  2. Salt as needed
  3. Pepper as liking( a little pepper killed nobody)
  4. 1 Egg
  5. Breadcrumbs half cup
  6. Grated Parmesan half cup
  7. Tarragon
  8. Oil

Ingredients(for the pasta)

  1. Spaghetti or linguine as much as your heart wants
  2. Salt as required
  3. Grated Parmesan as much as your heart desires

Ingredients(for the sauce)

  1. Bottled marinara ½ a cup

Method

Take you half chicken breast and pound it gently to flatten it a bit(reduces cooking time). Salt and pepper it. Now take 2 trays. In one beat an egg and add a pinch of salt to it. In the other mix Parmesan, breadcrumbs and finely chopped tarragon. Dip the chicken in egg wash and then in the cheesy breadcrumb mix. Now again dip it in the egg wash and in the breadcrumb mix(doing it twice makes the coating firm). Now fry your cutlets in heat for about 6 minutes each side. Rest it for 5 minutes and slice it. Boil a pot of heavily salted water and add your choice of pasta to it. Stir it immediately and do not add oil(makes your sauce slip away). Heat your bottled marinara. Take your pasta onto a plate add some grated Parmesan on it. Add the marinara and and place the sliced chicken cutlet on it. Add some more grated Parmesan(the more the merrier) and sprinkle some fresh basil on top(optional). Some Merlot or my favourite Pinot Noir is the best partner to your chicken Parmesan. Some light music and your “Lady and the Tramp” setting is good to go.
