Dating : What is the reason for blocking and unblocking?

So I’m Male at my 30 and I met this girl who’s 24 at my work a few month ago. We hit it off well and she would always message me and even texted me on weekends. It’s been a week and suddenly she told me she has a boyfriend which shocked me cause I thought she was pursuing me. The next day she said she broken off with him and a few days later i see her with her ex in a Instagram story post and the following week she said they decided to be friends. Now it’s like on and off with her and her ex and she constantly blocks me and unblocks me twice already. The first time she blocked me on social media, we didn’t talk for 2 weeks which is rare until i decided to reach out to have lunch and we go back to our normal routine of talking and meeting office hours. This week I know she met up with her ex again and ended up blocking me and she unfollows her ex as well and now she’s ignoring me. Anyone ever had this experience or perspective on this? I tried asking her out on date but she would blow it off as saying it’s too soon which is true, I wanted to give her time but sometime she would bait me with dating and other things that tested my patience. I mean I feel she’s on the fence between her ex and me at the moment. I feel I should wait a few weeks before reaching out again but keeping my option open as well.
